Gluten Free Pizza Base

I found it very hard to find a good gluten free pizza base that didn't crumble. After about a year of trying every recipe I could find I gave up and made my own. This is what I came up with its is a little like a sponge but making it this way stops it from crumbling and is very filling so a little does go a long way.

After making the dough its best to roll it out onto grease proof paper so that it's easier to transfer onto the baking tray, just lift the paper and put it on the tray. I find that it is best to bake it on a medium heat for about five minutes before taking it out and placing your sauce, cheese and toppings on it and putting it bake in the oven for about 10 to 15 minutes ( it depend I like it very crispy and well done).

Debs Cake and 30th

Debs Cake.
This is the cake that I made for a debs recently. I really enjoyed making it mainly because I finally got to try out some new techniques. I used a stencil on the top of the cake which I got with a cake decorating magazine ages ago but hadn't had a chance to use. I used purple/pink royal icing and was very happy how it turned out, I was expecting it to be a mess or to thin or thick. That is why I used a separate piece of sugar paste and then placed on the cake. I also used a new rose petal silicone mold for making the rose petals. I was very happy with the roses and will definitely use it again ... alot. The cake was chocolate biscuit which I get asked to make alot and I love to make it's very simple to make when you know how and no oven is needed just a fridge to set it in and a hob to met the chocolate and butter. The best part of making a chocolate biscuit cake is the gorgeous smell of chocolate in the house ...yuuummm.

This cake was for a 30th Birthday for a really big Chelsea fan. I was asked to make a cake which included something to do with Chelsea and photos of her kids. I had the Chelsea logo printed onto an icing sheet and cut around the yellow circle. I also had the photos printed onto icing sheets. I used my new pearl silicone mold making this cake and was impressed how well it make the cake look. I added little white leaves and red roses to the bottom left of the cake to give it a girly feel and to keep the blue, red and white theme of the cake. This cake was made as a surprise and I have since been told that it made the birthday girl cry!! she was so happy to have a cake with her favorite team and her children on it. I think that has to be the best thing I have ever been told about a cake. It's amazing to be told that someone loved the cake you made for them so much that they cried and I am so happy that it was enjoyed so much.

Kids Birthday Cakes

 Iggle Piggle

It was my two cousins birthday party last week and these where the cakes they asked for. The iggle piggle cake was for JD who just turned Four. He loves Iggle Piggle and chocolate which is exactly what he asked for and exactly what he got. He wasn't however all that up for cutting the cake. I can kind of understand why he does love iggle piggle enough for him to want a cake of him made and then we try and slice him up haha. Poor child gave in eventually only because he knew there was chocolate on the inside. I used green and blacks organic chocolate powder for the first time making this cake and have to say that I will only use it from now on. The difference in the taste was incredible and absolutely gorgeous. It's left me wondering why I never tried it before.

 Fairy

This was Katie-Mae's cake. She has just turned Five and loves everything girly and fairy like. She asked me to make a cake of as fairy that had wings and was magic and glittery. The most important part was a sparely wand. I wanted to make it special inside as I knew she would like it (which she did). This is why I added food colour the the mixture before putting it in the tins. I actually love when someone cuts the cake and gets a surprise of the favorite colours on the inside. Although this is not for everyone so I only do it occasionally or when asked. I used four sandwich tin cakes to make this using buttercream in between each layer  Then I carved the shape of the dress and cut a hole and put the doll in. After that I covered it in buttercream and then fondant before decorating it with cutout leaves and frills (this took the longest). A few finishing pieces and glitter (edible of course I don't use the non toxic ones only edible).

Some Favourites from the year.

Christmas

Really loves making these as I got to use some new metallic paints and Christmas themed cutters. I entered them into a cupcake competition but was not lucky enough to win. The other cupcakes where very good.

Halloween

Witch Cake. I love making doll cakes but don't always get the chance.

 Christening

This is the Christening cake that I made for my new little cousin's Christening. I loved everything about this cake. I made a fondant shoother, rattle, car and teddybear. My favourite thing about this is the picture that I had printed of him on to icing, even if it did make me feel a bit wierd if someone was going to eat this part! (but don't worry it was removed before it was eaten haha)
Competition

I entered this into a competition during the summer and came first. I was so happy with this I just love bright coloured cakes. I also loved the prize! I won a winton ultimate cake decorating kit and a voucher for the shop that the competition was held in. I bought my hugh non stick board and rolling pin with it. I don't know how I survived without it before!
Debs Cupcakes
These cupcakes where for my sister and her boyfriends debs. Her dress was green and silver and he was wearing a tie to match so I just had to go with the colours as they go so well together. I also love any excuse to use my metallic paints.
Coffee Morning Cupcakes.

These Cupcakes where for a coffee morning that my mam was holding for the local hospice. It was her second year doing it and we baked lots for it. My mam baked breads, scones, teacake and lots more. I love baking for coffee mornings. My mam raised alot of money that day that went to a great place. The cupcake with the butterfly and teddy bear was one of a few that I made for some of the mornings visitors to take home tho their kids as a treat.
