Haven't been on here in a while so thought I'd come back and fill in the missing month. Been a bit of a crap June weather wise but did get a lot of baking done. Tried out some new recipes which I will post another time when I've sorted out proper measurements (I just like to trow things together and see what happens). Also had family visiting from Australia in the start of June which involved a lot of alcohol and basically moving into the local pub for a weekend haha so not very much baking done that week at all. I made cakes for three different events. 


60Th Cake & Cupcakes

The first was a 60th birthday that I made a Chocolate Biscuit cake and 36 Cupcakes. The Cupcakes where vanilla and chocolate butter cream icing, chocolate and vanilla butter cream icing, chocolate cupcake and chocolate butter cream icing and vanilla and vanilla butter cream icing.

Double Christening Cake & Cupcakes


The second cake was for a double christening of a brother and sister and 20 cupcakes. The cake was made of chocolate biscuit and was really heavy. I was asked if I would include a teddy and car as well as blocks with the baby's names on the cake. I really enjoyed making this cake as I never made a christening cake for a boy and girl together and really loved the idea. the cupcakes there vanilla and vanilla (my most popular) butter cream. Ten where decorated with blue butter cream and blue fondant and the other ten where decorated with Pink butter cream and pink fondant.

Birthday Cake For My Sister.


The third cake was a gluten free chocolate roulade layered cake with chocolate and vanilla icing. I made this for my sisters birthday and it was gluten free as she is coeliac. It was covered in purple fondant and decorated it shiny gold, silver and glitter jewellery themed fondant decorations. the cameo was made of chocolate and covered in silver luster dust. My sisters a jeweller which explains the design. I highly recommend making roulade instead of other gluten free cakes as it is very simple to make and is absolutely gorgeous. Instead of rolling the roulade like its traditionally made I cut circles out of it and layered then with icing. It can be very delicate so I had to be very careful lifting the layers but well worth it.

Communion

The finished Products.

These are the cupcakes and cake that I was making for two different communions this weekend.

Communion one:

This is the cake which was part of  the cake and cupcake order. The cake was chocolate biscuit covered in white fondant, and decorated in pink and white handmade fondant decorations. I used embossing letters for the communion day round piece. The blocks , round piece and twisted icing on the bottom all had a little luster dust on them to give it a slight sparkle.
This is how I like to wrap the cakes to go I find it nicer to present then in a box and as its all fondant I don't have to worry about the icing coming off while moving it. I also think the ribbon makes it look really cute.
These were the cupcakes for that same communion there where 20 of them in total. The cupcakes where vanilla flavoured with white and pink vanilla flavoured butter cream icing. they where decorated with white and pink fondant decorations and covered in a light coating of luster dust. I also used pink sugar balls to finish them off on top.

Communion two:

These where the cupcakes for the second communion. There was 20 of them in total. They where vanilla favoured cupcakes with white vanilla flavoured butter cream icing. they where decorated with silver ( silver luster spray) pink and purple fondant decorations. Again I also used pink sugar balls to decorated these cupcakes.

Just for fun.

I made these the same time but just to try out my new shoe and handbag plungers. I also added some hearts and flowers too just to vary it a bit. Really liked how these turned out think I may be doing more of these in the future.

Orange Cupcakes with Chocolate Icing

The cupcakes

Mini and Large cupcakes displayed on my record cupcake stand that I made a little while ago. I made these using my regular recipe but adding an orange flavour instead of vanilla. I added about 4 tablespoons of Cointreau to get the orange flavour but it depends how strong a flavour that is liked. For the icing I used melted chocolate, unsalted butter and icing sugar. I used a recipe that I recently came across for this icing but did not like the consistency so I added some more icing sugar to it until it was how I wanted it. I also added some cocoa powder to give it a better chocolate taste ( next time I will use better quality chocolate.) I decorated them with orange chocolate discs and gold glitter.

Christening

Cake and cupcakes for Christening 

This is the cake and cupcakes I was asked to make recently for a christening of a baby boy. 

The Cake

The cake was chocolate biscute ( my own recipe ) decorated in blue and white fondant.

Some of the cupcakes which where vanila and buttercream decorated with fondant cutout flowers.

Finally got to use my new cake caddy to deliver this cake and also two big boxes with lids that hold 15 cupcakes each.

April Shopping


What I got on a couple of shopping trips this month. Been a bit busy so haven't had much of a chance to play with some of them but the cutters and rolling pin have been great!

What to do with left over sponge.

Mini iced cakes

Cut out shapes using cookie cutter from the sponge I only had small pieces of sponge leftover so used the smallest cutters that I had.

 
Place the little sponges on a cooling rack and pour icing ( royal) over them then add decorations let dry and there done. 

Cake pops.


I love making cake pops they are so easy to make. All you have to do is mix the sponge crumbs with butter cream then roll into ball shapes. After letting them set in the fridge attach a lollipop stick using a bit of melted chocolate or candymelts. When the chocolate drys dip the cake pop into melted chocolate or candymelts the add sprinkles or whatever decorations that you would like.

Up the Dubs!!!

Dublin GAA Jersey cake.


Was asked to make this cake last week and couldn't wait to get started! It was to be given to members of the Dublin GAA  team as a thank you for their work in the Easter camp. I made it from vanilla sponge using two square tins a 12 x 12 inch tin and a 8 x 8 inch tin. The main part of the cake was made using the bigger size cake after trimming the outside edges and cutting the v at the top. The sleeves I cut from the smaller cake and attached them using buttercream. I coated the cake in a thick layer of buttercream before putting the fondant on the cake. I painted the GAA and O'NEILLS on using coloured royal icing and made the crest and THANK YOU from fondant. I attached the details with water and a thin brush. Also the board that it is on is 14 x 14 inches.

Easter Cupcakes


I made these cupcakes for Easter. They where lemon flavored and decorated with lemon butter cream, green coconut and mini eggs. I made the green coconut by mixing green food colour and coconut together. It's so easy and great for decorating everything like cookies and cakes.

First Post! What I'v made so far this April

Birthday Cake for my cousins.



Was asked to make my two little cousins a birthday cake. Katie-Mae was turning 4 and J.D was turning 3, as their birthdays are only a couple of days apart they have a joint birthday. Came up with this idea only the night before so ended up staying up till after 4am to make it. Can't complain I did really have fun making all the flowers and cars. It was made of chocolate sponge and vanilla butter cream. I think it turned out pretty well from something thought up last minute.

Colourful flower and butterfly cake.



I have been waiting for ages to try this. I took a while to cut out all the flowers and mix the colours and as I didn't have a leaf cutter I had to make them myself. That took a while to get right. I covered the cake in white fondant after the butter cream and then cover in the flowers and butterfly's using royal icing. I also covered the cake board in fondant cutout leaves.

I wanted the inside to be as colourful as the outside so split the sponge in into five or six and mixed in different colours. I used three sandwich tins that I kind of randomly poured the different colours into. I put them together with a layer of vanilla butter cream between each layer of sponge.
